Brown Sugar Icing for Cookies

Ingredients: 1 cup whipping cream

1 cup brown sugar 1/2 cup butter

1 teaspoon vanilla

Method: 1 Add cream, sugar, and butter to saucepan 2 Cook until the mixture hardens to a soft ball 3 Beat well by hand until the icing starts to harden 4 Working quick, spread icing on the lower side of one cookie and top with

another cookie (making a sandwich) Any remaining icing can be placed as a dollop on top of the cookie sandwich.

Enjoy with a glass of milk or a cup of tea!
